Pimiento Cheese – “the paste that holds the South together”
Ah, the magic of pimiento cheese, a truly Southern delicacy, on hefty sandwiches with sliced tomatoes, stuffing celery sticks, on crackers, or on those little white bread finger sandwiches that folks make when they want to do something a little more elegant. There is just something about the flavor blend that makes pimiento cheese impossible to resist. But, everyone who makes PC themselves has a different recipe. None of the hundreds of homemade PCs I have tried over the years tasted like “store bought” Poor Mrs. Weaver just didn’t get it.
So this month’s recipe is not a recipe per se, but a concept to build on. Everyone has an opinion.
Basic Pimiento Cheese
8 oz.- Sharp Cheddar Cheese (or use any kind of cheese you like, grated course or fine)
4 oz.- jar of chopped pimientos
1/2 – medium onion (finely chopped)
3 heaping Tbs. – Mayonnaise
1/4 tsp. – red pepper
salt to taste
Mix ingredients and refrigerate overnight before serving.
Pretty simple, eh. If you have never made PC before you are now a super star. Every PC maker has one or more special ingredients; maybe it’s a different type of cheese, a substitute for mayo, or an array of seasonings and fresh herbs. Some of my favorite additions (maybe not all in the same batch) are 2-3 Tbs. – Feta Cheese, sweet pickle relish (0r better yet, Mrs. Renfro’s hot chow-chow), finely chopped green olives, bacon, chopped pecans or almonds. I am sure that some of you readers have your own variations, and I hope you will share them in the comments.
