Tuna Salad
I have been making this simple tuna salad since I was a child. It’s great for sandwiches or salad plates with lettuce, tomatoes, cottage cheese, etc. It’s quick to make and tasty, and a whole lot better than store-bought. You can half the recipe easily.
- 2 – 7 ounce cans of Tuna (drained)
- 4 – Boiled eggs
- 1/2 – medium onion (chopped)
- 4- TBS sweet pickle relish (I prefer using a spicy chow-chow like Mrs. Renfro’s)
- 2-3 – TBS of mayonaise
- Salt and pepper to taste.
- Chop tuna, eggs, onion and mix with relish and mayo. Season to taste.
This makes great sandwiches, complements lettuce, or tomatoes for salads.
